Knives

Im new to knives, what do you recommend?

My preference when it comes to knives is dominantly a Japanese style chefs knife. The Gyuto. Its a great all purpose knife, works equally well on meat, fish, and vegetables. I make this knife at right about 8in which seems to work well for the way I cook and has had nothing but praise. Another easy entry to knives is a Sontuko style knife, these are fairly common in knife sets which makes the shape feel more approachable. I make mine at 7in but size can be tailored to your liking.

what are your knives made of?

The culinary Knives you will find on my site are all forged in shop from high carbon steel, I am specifically working with 52100 and in some cases Japanese white and blue laminate steel. My smaller knives and novelty knives are generally made from repurposed tools / tool steel.

The knife handles are made from an assortment of materials. The colored handles you will find of mine are stabilized and dyed wood burls, these provide stunning grain patterns and vibrant colors. Accompanying these burls I use various other hardwoods, walnut, ebony, african blackwood. In special cases, usually upon request, I am able to incorporate materials such as turquoise, bone, and mammoth tooth.

How do I sharpen / can you sharpen my knife?

If you are becoming passionate about knives i hope you will also become passionate about keeping them sharp. While whetstone sharpening is the best way to sharpen your knife, I know that this process isn’t for everyone. A ceramic honing rod is the first step to at home sharpening for knives that see regular use. I encourage everyone to buy one of these, they are easily available online through knife shops and even on amazon. If you are interested in stone sharpening I recommend checking out the videos provided by Bernal Cutlery on Youtube.

Yes, I can sharpen your knife. If you have purchased one of my knives I am more than happy to help you maintain it. I provide a sharpening service the first and third weekend of every month at the shop, knives dropped off on Saturday will be ready Monday. do you take custom orders?

yes. whether a gift for yourself, or a gift for someone else, i want to make you a knife that you’re going to love. if the perfect knife isn’t available at the moment in the shop or you have something a little different in mind please send me an email, I leave space in my schedule to accommodate a few custom orders each month, current turnaround time is 4-6weeks and a 50% deposit is required to begin a new project.

Cutting Boards

Do you make those cutting boards too?

Yes I sure do, even before I was making knives I was making cutting boards. They are made in rather small batches periodically throughout the year.

what are the boards made of?

All the cutting boards are made of walnut. Though the light and dark tones may very, I do not use any other type of wood for these pieces.

I have purchased a cutting board, how should I care for it?

I suggest wiping clean immediately after use and drying thoroughly. these boards should never be left to soak in water. To restore the finish, I encourage customers to use finishes by Walrus Oil. These are food safe wood finishes by an outstanding company, the Wood Wax and Cutting Board oil are two of my favorites.

How do you ship?

All orders ship USPS priority mail. Additional fees will apply for shipments to Alaska, Hawaii, all other countries, oversized packages, and Fedex / UPS requests. these fees determined after purchase. Standard shipping rate applied at times purchase.

When will my order ship?

Shipments leave the shop every Wednesday and Saturday morning.

Do you have gift boxes?

Upon request a wooden gift box for your knife or cheese knife set can be made and packaged accordingly. Please note the request at time of purchase an you will be contacted. fees apply.
